Plus, purple potatoes are allegedly the secret to living until you’re 100 according to some documentary I half-watched. So, let's whip up this Gluten Free Lavender Honey Ice Cream recipe that’s Instagram-worthy, kid-approved, and (almost) health-conscious! Now, a quick side note on this recipe: we’re skipping the eggs because my youngest is allergic to them. As much as I love a good ice cream, I'm not about to accidentally ruin her. So, egg-free it is! I don't notice any difference anyway and it skips a whole step too.

How to Make this delicious Lavender Honey Ice Cream
Here’s how to make Lavender Honey Ice Cream that is sure to be an absolutely winner:
Ingredients
2 cups heavy cream
1 ¾ cups whole milk (because if we’re making ice cream, we’re not holding back)
¾ cup honey – local if you can swing it, because bees are saving our planet and also it tastes better.
1 tbsp dried culinary lavender – yes, you read that right, we’re going floral here.
1 tsp purple potato powder – because we’re classy like that, but hey, if you don't have it, a drop of food coloring works too.
Pinch of salt – to balance all that sweetness and add a little chef-y flair.
Instructions
Heat things up. In a saucepan, gently heat up that heavy cream along with the lavender until it just starts to simmer. Don’t let it boil, or things will get weird. Then, pull it off the heat, cover it, and let it steep for a good 15-20 minutes. Basically, we’re making lavender tea... out of cream. Fancy, right?
Strain and sweeten. Once it’s steeped and smells like a floral dream, strain out the lavender buds. Then, pour in that glorious honey and give it a stir until the honey’s fully dissolved and the whole mix is sweet and silky.
Cool it down. Add in the cold milk, a little pinch of salt, and either the purple potato powder (if you’re feeling gourmet) or just a drop of purple food coloring for that Instagram-ready hue. Stir it all up!
Chill time. If you’re using a classic ice cream maker, chill the mixture well in the fridge first. Pour it into a bowl, cover it with plastic wrap (pressing it down onto the surface so you don’t get that weird skin) and stick it in the fridge for at least 4 hours or, even better, overnight. You want it cold, cold, cold!

Freeze for firmness. Once it’s churned into creamy lavender heaven, transfer it to a lidded container (I’m partial to a good sturdy one that keeps the frost out) and pop it in the freezer for a couple of hours to firm up. After that, you’re ready to scoop and serve.
