Gluten Free White Bean and Sun-dried Tomato Dip
Gluten Free White Bean and Sun-dried Tomato Dip Recipe

Ingredients:

  • 1 can (15 oz) cannellini beans, drained and rinsed

  • 1/2 cup sundried tomatoes packed in oil, drained

  • 2 tablespoons of the sundried tomato oil (from the jar)

  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

  • Salt and pepper to taste (maybe start with half a tsp of salt and go from there)

  • Olive oil for drizzling

  • Optional chopped black olives if you like them, as a topping


Instructions:

  1. Prep the Ingredients:

  • Drain and rinse the cannellini beans.

  • Drain the sundried tomatoes, reserving 2 tablespoons of the oil from the jar.

  1. Blend the Dip:

  • In a food processor, combine the cannellini beans, sundried tomatoes, sundried tomato oil, minced garlic, lemon juice, parsley, and rosemary.

  • Blend until smooth and creamy. If the mixture is too thick, add a little water or olive oil, one tablespoon at a time, until you reach your desired consistency.

  1. Season and Serve:

  • Taste the dip and season with salt and pepper to your liking. Give it one last blend to mix in the seasoning.

  • Transfer the dip to a serving bowl and drizzle with a bit of olive oil. Garnish with additional chopped parsley if desired.
