Garlic and Herb Gluten-Free Bread Machine Recipe


This gluten-free bread is soft on the inside, crisp on the outside, and packed with savory herbs and garlic for extra flavor. Ingredients:


Wet Ingredients:

  • 1 ¼ cups warm water (about 110°F)

  • 2 large eggs (room temperature)

  • 3 tablespoons olive oil

  • 1 tablespoon honey (or maple syrup for a hint of sweetness)

  • 2 teaspoons apple cider vinegar


Dry Ingredients:

  • 2 ½ cups Caputo Fioreglut gluten-free flour

  • ½ cup sorghum flour (adds a mild sweetness and fluffy texture)

  • ¼ cup almond flour (for richness)

  • 1 tablespoon psyllium husk powder (helps with structure)

  • 1 teaspoon xanthan gum (Caputo has some starches, but this helps ensure a better rise)

  • 1 teaspoon salt


Yeast & Seasoning:

  • 2 ¼ teaspoons active dry yeast (or 1 packet)

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • ½ teaspoon dried rosemary (or more thyme)


Instructions


1. Prepare the yeast mixture

  • In a small bowl, mix the warm water, honey, and yeast. Let it sit for 5-10 minutes until foamy.


2. Load the ingredients into the bread machine

  • Add the wet ingredients first: eggs, olive oil, vinegar, and the yeast mixture.

  • Add the dry ingredients on top, ensuring the salt does not touch the yeast directly.

  • Sprinkle the garlic powder, oregano, basil, and rosemary evenly over the flour.


3. Select the right settings

  • Use the "Gluten-Free" setting on the Zojirushi Virtuoso.

  • If your machine does not have a gluten-free setting, select Basic or Quick Bread but disable the second kneading cycle (gluten-free dough does not require extra kneading).

4. Let the machine do its thing!

  • Once baking is complete, remove the bread pan and let the loaf cool for 10-15 minutes before slicing. We never achieve this but if you do then pat yourself on the back for your incredible discipline.


Pro Tips for Perfect Gluten-Free Bread

Sift the flours before adding to avoid clumps.

Scrape down the sides during the first mix cycle if needed.

For extra crunch, brush the top with olive oil and sprinkle sea salt before the baking cycle
