How to Make This Gluten Free Eton Mess
Yield: 6-8 Servings, Prep Time: 25 minutes, Cook Time: 90 minutes
Ingredients:
4 large egg whites or 2 cups store-bought meringues
1 cup granulated sugar
2 cups heavy whipping cream
1 teaspoon vanilla extract
Pinch of salt
2 cups fresh strawberries
1 cup fresh raspberries
1 cup fresh blueberries
2 tablespoons powdered sugar
Grated dark chocolate (for topping)
Instructions:
Meringue Magic (If Using Homemade):
Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
In a large bowl, beat egg whites on medium speed until soft peaks form.
Gradually add granulated sugar, a tablespoon at a time, beating on high speed until stiff, glossy peaks form and sugar is fully dissolved.
Spoon the meringue mixture onto the prepared baking sheet, making small mounds. You can also pipe the meringue if you want more uniform shapes.
Bake for about 1.5 hours, or until the meringues are dry and can easily lift off the parchment paper. Turn off the oven and let the meringues cool completely in the oven with the door slightly open.
Prep the Toppings
Get Berry Ready: While the meringues are cooling, prepare your berries. Place the sliced berries in a bowl. Reserve about 1/4 of them to decorate the top.
Whip up da Cream: Beat the heavy whipping cream and vanilla extract until soft peaks form. Be careful not to overbeat, as you want the cream to be light and fluffy.
Assemble the Gluten Free Eton Mess:
Break meringues into bite-sized pieces and place them in large serving bowl or individual glasses. Continue to alternate layers of whipped cream, crushed meringues, and mixed berries until you’ve used all ingredients. Finish with a layer of berries on top.
Eton Mess is meant to be a little chaotic and messy so don’t go too wild on the mixin'
Finish with Chocolate: Grate dark chocolate on top for an extra touch of decadence.
Serve It Up - Serve the Eton Mess immediately for the best texture, or chill it in the fridge for up to an hour before serving.
