How to Make These Greek Chicken Kebabs

Yield: 8 Servings Prep Time: 20 minutes Cook Time: 20 minutes

Ingredients

For the Marinade:

  • 1 1/4 cups olive oil

  • 3/4 cup fresh lemon juice (about 3 large lemons)

  • 10 cloves garlic

  • 1/2 cup fresh oregano

  • 1/2 cup fresh parsley

  • 3 tbsp paprika

  • 3 tbsp ground cumin

  • 1.5 tbsp salt

  • 1 1/2 tbsp black pepper

For the Kebabs:

  • 5 lbs boneless, skinless chicken breasts

  • 3 large onions

  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, parsley, paprika, cumin, salt, and black pepper. Make sure everything is well combined and fragrant.

  2. Marinate the Chicken: Add the chicken cubes to the bowl and toss to coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes, but preferably 2 hours. If you can let it marinate overnight, even better – the flavors will be even more intense.

  3. Preheat the Grill: Preheat your grill to medium-high heat. If you’re using an oven, preheat to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper.

  4. Assemble the Kebabs: Thread the marinated chicken pieces onto the skewers, alternating with pieces of onion. Pack them tight, but not too tight – you want everything to cook evenly.

  5. Grill the Kebabs: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. If using the oven, bake for 20-25 minutes, turning once, until the chicken is fully cooked and the onions are tender.

  6. Serve: Remove the kebabs from the grill (or oven) and let them rest for a few minutes. Serve them hot, garnished with extra lemon wedges and a sprinkle of fresh parsley.

Few Pro Tips to Cook Like A Greek Goddess/God

  • It's All About the Marinade - Gluten-free or not, the marinade can make it or break a good kebab. For the juiciest chicken, use a blend of olive oil, lemon juice, garlic, oregano, and a touch of yogurt (or a dairy-free alternative) to lock in moisture. Marinate for at least 2 hours, but overnight is even better—this helps tenderize the meat and amps up the flavor.

  • Skewer Like a Pro - quick reminder to soak wooden skewers in water for at least 30 minutes before grilling to prevent any fire mishaps! (nobody wants a flaming kebab situation). Thread the chicken evenly, leaving a little space between pieces—this ensures even cooking and those perfect charred edges.

  • Cook It Hot & Fast - Greek kebabs need high heat to get that beautiful golden-brown sear without drying out. Grill over medium-high heat (or use a grill pan) for 10-12 minutes, turning occasionally. No grill? No worries! Roast them in a 450°F oven for 15-20 minutes, finishing under the broiler for a bit of charring.
