You can adjust the herbs but one that you shouldn't skip is Mace which gives them the classic banger flavor. You are unlikely to find it in an American grocery store but you can get it on Amazon here.
You may need a second pair of hands if you are planning on grinding your own meat or stuffing them into casings. I tend to call on a small child into service for this.

How to Make Banging British Bangers
Yield: 6-8 Servings, Prep Time: 25 minutes, Cook Time: 12 minutes
Ingredients:
4 pds boneless pork shoulder
1 pd pork back fat
2 to 2 1/2 cups ice and ice cold water
1 cup coarse homemade GF breadcrumbs.
2 1/2 tbsp salt
1 1/2 tbsp freshly ground white pepper
1 1/2 tbsp minced fresh sage
2 tsp onion powder
2 tsp ground ginger
2 tsp ground mace
1 tsp ground nutmeg
32mm natural hog casing
Instructions:
Prep the Casings: Soak the pork/hog casing in warm water to make it flexible then rinse by running ice cold water through them.
Grind the Meal: In a large bowl, combine pork shoulder, pork back, and crushed ice and grind the mixture using a medium setting. Freeze it for 30 minutes then mix in the herbs and spices and then grind again on a fine setting.
Stuffin' the Sausages: set up a sausage stuffer or use a piping bag with a large nozzle. Thread the casing onto the nozzle, leaving a little extra at the end for tying.
Fill 'em up: Carefully fill the casing with the meat mixture, being mindful not to overfill. Then twist into links and tie off the ends. Use a needle to poke air bubbles (prevents bursting during cooking).
Chill the Bangers: Place them on a plate, cover, and chill for 30 minutes to firm up.
Cook the Bangers: Choose your cooking method:
🔥 Pan-Fry: Cook in a skillet over medium heat for 10-12 minutess, turning occasionally.
🔥 Bake: Preheat oven to 375°F and bake for 20-25 minutes.
🔥 Grill: Skewer them up (even if your husband disapproves) and grill to perfection.
