Make This Gluten Free Starbucks Egg Bites Copycat Recipe Even Simpler

If, like me, you want to eat these every day then you might want to make them ahead and freeze them. I use this electric egg maker which steam cooks them to perfection, then cool them and freeze in Ziploc Bags. I heat them up again in my airfryer.

Ingredients:

  • 6 large eggs

  • 1/2 cup cottage cheese (for that silky texture, darling)

  • 1/2 cup shredded Gruyère cheese (because we’re fancy like that)

  • 1/4 cup cooked bacon bits or ham (optional, but who doesn’t love a bit of bacon?)

  • 1/4 cup baby spinach, chopped

  • 1/4 cup red bell pepper, diced

  • Salt and pepper to taste

  • A pinch of smoked paprika (for a cheeky twist)

  • Olive oil spray for greasing your muffin tin or silicone moulds


Instructions:

  1. Preheat your oven to 300°F. Yes, it’s a bit lower than you might expect, but we’re going for that soft, creamy Starbucks vibe!

  2. In a blender, whizz together the eggs, cottage cheese, and Gruyère until smooth and frothy. This is where the magic happens, folks!

  3. Grease a muffin tin or silicone moulds with olive oil spray. You want these bites to slide out as smoothly as you’ll be eating them.

  4. Divide the bacon (if using), spinach, and bell pepper evenly between the muffin cups.

  5. Pour the egg mixture over the toppings, filling each cup about 3/4 full. Sprinkle a bit of smoked paprika over the top for that extra kick.

  6. Bake in the oven for 20-25 minutes, or until the egg bites are just set and slightly golden. Don’t worry if they puff up—they’ll settle down once cooled.

  7. Let them cool for a few minutes before popping them out and tucking in. These little beauties are perfect for meal prep, so make a batch and enjoy all week long!
